Grape variety: 100% Tempranillo
Vinification: Vinification in open-top wooden vats, cold soaked for 24–48 hours and fermented for 10–12 days with daily punch-downs and gentle pumping over.
Aging: Malolactic fermentation in barrels. 12 months barrel aging in French oak
Vineyards: Located in Laguardia, Elvillar and Leza at 450 to 700 meters and planted in calcareous clay soils.
Winegrowing: Environmentally friendly, without insecticides or weed killers. Organic viticulture.
Harvest: Manual harvest in 200 kg boxes. Cluster and berry selection. Average yields of 4,000 kg/ha
